Not going to lie, I've been on a huge salmon kick recently. Fillets of salmon have quickly become one of my 'Favs' in my Fresh Direct account, but I guess there can be worse things to be over-indulging in.
The first time I took a chance baking salmon (which was very terrifying because I had never cooked fish before), I just took straight brown sugar, and rubbed it onto the salmon. I thought it was great, but it was clearly before this deliciously sweet glaze was introduced into my life.
Buttery, honey, brown sugary goodness. That's all I have to say. Try it for yourself, and tell me you don't want to eat it multiple times a week.
The best part about this meal, is that it's not only healthy, but it's pretty impressive, with barely any prep and with only 30 minutes (approx.) of prep + cooking time. Serve with a taste roasted veggie, and you're good to go!
Honey & Brown Sugar Glazed Salmon
What You'll Need:
- 2 Fillets of salmon (serves two)
- 3 tablespoons butter
- 2 tablespoons honey
- 1/4 cup brown sugar
Preheat oven to 425°
In a small saucepan, combine butter, honey and brown sugar and cook over medium heat until melted together and smooth
Place salmon on an aluminum foil-lined or lightly sprayed baking contraption with sides (jelly roll sheet, Pyrex or a VERY convenient foil to-go container that you can easily throw out afterwards). Sides are crucial, as the glaze will drip off salmon and all over your oven :)
Pour/brush half of the glaze over salmon
Bake uncovered for approx. 10 minutes
Add the rest of the glaze a second layer of glaze, and cook for another 10 minutes
Tip: cook a roasted veggie while you're cooking the salmon -- it'll save you lots of time, and your whole meal will be ready all at once
