Homemade Almond Butter

So I've mentioned this before, but I have some weird food allergies.

At this point, they won't kill me, but they make me pretty uncomfortable. Itchy gums, throat, sometimes it feels like my throat is closing a bit, but hey, I manage to make it through.

Most of the things that I have a reaction to I try and avoid in raw form (celery, cherries, apples, walnuts), but the one thing that takes some willpower to avoid are peanuts. Specifically peanut butter.

I'm finding that sometimes I have no reaction, like to peanut M&Ms or a Snickers, but if I were to eat a bunch of real peanuts or real peanut butter, I get very uncomfortable very quickly.

My solution? ALMOND BUTTER!

Thankfully people started jumping on the almond butter band wagon a few years ago, and I decided to try it out. I initially tried it in my Spinach Smoothies, and was pretty surprised at how similar the two spreads were.

Obviously I'm not saying they are the same, but the similarities curb my peanut butter cravings AND this stuff is insanely easy to make (should you want to go the homemade route). I'm talking silly easy. Don't believe me? Check out the instructions below.

People On 'Gluten-Free' Diets (Try To) Explain What Gluten Really Is

I'm off to California later today for a lovely weekend filled with burritos (yes, I'm still basking in Cinco de Mayo festivities), beer and other goodies, but wanted to leave you with this gem.

(Frozen) Breakfast Burritos

Happy Cinco de Mayo! I hope everyone is either planning on drowning in margaritas, chips and guac tonight, or got it out of their system over the weekend.

So...most mornings, I run out of our apartment without having eaten breakfast. Those mornings, I end up wanting to eat lunch at around 10:30 AM. Not good. Easy solution for this problem?

At first I was a bit apprehensive that after re-heating, they would be soggy and not taste fresh, but I was definitely wrong.

I've been eating these for a few days now, and highly recommend a frozen breakfast burrito test run to see if this could be your new go-to, simple breakfast solution.

No-Cook Thai Peanut Sauce

When it comes to ordering Thai food, I like to keep it simple. Pad Thai, some spring rolls and my favorite, Chicken Satay with peanut sauce.

That delicious peanut sauce.

I like that sauce so much, that I've tried my fair share of store-bought peanut sauces in the hopes that I could enjoy some Thai noodles or satay whenever I please. Due to my wimpy taste buds and inability to handle spicy food, I've never hit the jackpot.

Until now.

If you're a peanut sauce fan like I am, you gotta try this no-cook, made in 2 minutes sauce. It's a game changer.

I cooked up some asian rice noodles, steamed some bell peppers and broccoli, and whipped together the sauce, and had a quick and delicious dinner. So delicious that I don't know if I'll need to keep getting takeout... or maybe I'm getting a little ahead of myself, who am I kidding.
